Quick Toddler Lunch – Mini Pizzas

As a mother we are always looking for a good option for a quick bite and something different for Toddlers which as we know are and can be PICKY eaters!!!

One of my “go tos” is the mini pizza – we do a lot of healthy lunches but sometimes we just need those tiny humans to EAT! LOL! And it’sĀ a fight sometimes to get kids to eat.

This front you just need tortillas, mozzarella cheese, and mini pepperonis! That’s it!!

These amazing gems are something you can make together with your toddler or young child and they will LOVE the time in the kitchen with you!

Just look at them in all their yummyness – and yes that is not a word but it should be!

RECIPE:

Ingredients:

-Mini Pepperonis

-Mozzarella Cheese & Parmesan Cheese

-Flour Tortillas

-Butter

  1. Grab your muffin baking pan and butter each muffin hole (I use a biscuit cutter for this or you could use the opening of a glass)
  2. Cut your tortillas in the size it would take to fill the bottom of the pan in each hole
  3. Place your tortillas in each space
  4. Top each mini tortilla with mozzarella then pepperonis and then sprinkle a little Parmesan (this could be skipped if you don’t have any
  5. Place in oven at 350 degrees until the cheese is melted and bottom of tortilla slightly browned (about 4-7 mins)
  6. ENJOY

Notice I did not put amounts on this recipe as it is to your liking – you want a ton of cheese, load them up! You want 10 pepperonis in each mini pizza then GO FOR IT! šŸ™‚ this is a completely open recipe – change it up with breakfast sausage and cheddar cheese and make mini breakfast pizzas! This is a FUN activity you can do with your kid in the kitchen. There is a study that shows that kids are more likely to eat the food if they had a hand in creating it šŸ™‚ Get Creative!!
