Avocado Egg Bowl – bonus Oven Bacon Recipe

Now before you head to the recipe on this one, please read my next sentence. I THINK THIS RECIPE WAS A COMPLETE FLOP…. I THINK serving a fried egg with a side of avocado slices would be MUCH BETTER usage of your time! BUT, I tried the craze and fad and I have a recipe for you! So here it is.

I will start with the fact that it is a genius idea to cook these in the muffin tin as you won’t have to worry about them rolling over and throwing your egg out!

In this recipe I adjusted it to use Med or small eggs – this is important as I buy Large or XL eggs… So buying 1 size egg just for this recipe I think is a waste of my $$ (especially because I can get eggs at braums for $1 per carton!) — Strike 1! You can see in the pic above my egg whites spilling ALL OVER.

The second thing I would hint is to butter the muffin tin and remove the stickers from the outside of the avocado. As you will have some egg spillage, and maybe you can eat it if you don’t have avocado stickers baked into your eggs. Yes that was me. Strike 2! Wasted egg – BOO!

Now I did serve this with Bacon I cooked in the oven (for the first time) and this was delicious. Ill add that in below too. And it looked soo pretty and sounded soo delicious but in hindsight I realized: 1. I like my eggs scrambled or friend and not oven baked 2. I like my avocado cold and not melted hot. People love these, I am just not a fan! The recipe is good but the premise…. not so much. I wound up frying up an extra egg for everyone because there was too much avocado and everyone was still hungry! LOL

As Promised, reluctantly…. Recipe:

  • 2 Avocados
  • 4 Medium or Small Eggs*
  • 1 Muffin Tin
  1. Preheat oven to 425 degrees
  2. Cut Avocado in half and pull out the seed
  3. Scoop a little of the avocado middle out to make yourself a bigger hole or well for your egg to fit into nicely
  4. Place your avocado halves into the muffin tin, just so that they will not tump or spill out your egg – just for balancing them
  5. Crack an egg and pour into the hole in the 1st avocado half – repeat with other 3 halves and 3 eggs
  6. Sprinkle with Salt and Pepper
  7. Place in the oven for about 15-20 mins depending on how runny you want your egg yolk – this is a play it by eye guessing game here

 

*I didn’t think this was important until I had egg flowing all over the place

Bacon in the oven Bonus Recipe:

  1. Preheat oven to 400 – lay bacon on a cooling rack over a pan (covered in foil – optional) that will catch the grease – do not overlap
  2. Bake for 15-25 mins depending on how crispy or not crispy you would like your bacon
  3. Place on bed of paper towels to grab more of the grease

It was definitely easier than frying it all up on the stove! But you have a ton of pans dirty to clean at the end 🙂 Catch 22!
