You guys! I made this for dinner LAST NIGHT… Not often do I feel like I need to share recipes immediately but this was SOOOO delicious and with my morning workout this morning I felt soo strong!
This is packed full of protein, iron, and all the good stuff! It was filling and felt healthyish (I didn’t have whole grain pasta on hand – so to make this even healthier use your whole grain pasta).
We started dinner late last night so I was rushing around the kitchen and my hubby stepped in to help. Ladies, don’t try to always be super mom – you can ask for help. I struggle with this but my husband is soo good about telling me it’s ok to take his help. This also comes from over 10 years of marriage and finally learning how to communicate with each other! It takes WORK.
He called himself the Serial Tomato chopper 😂 Normally I roll my eyes at his terrible jokes – but after a LONG day I laughed WAY to hard at his bad Dad joke… LOL!
This was soo quick to throw together, literally it was a what do we have in the pantry/fridge – let’s use that. This is why my “stock the pantry” post is soo important. This could have been a night we said screw it.. it’s late.. let’s just go get something.

But we didn’t and 30 mins later (literally less time than it would have taken for all of us to get out the door and in the car) we had a super yummy, super delicious meal that EVERYONE got seconds!
YES… It was THAT DELICIOUS!!
Ok – enough chit chat!
Recipe deets:
Ingredients:
- 2 Chicken Breast
- 2-3 Cups Fresh Spinach*
- 2 cloves garlic – finely chopped **
- 2 tbsp butter ***
- 3 Cups Balsamic Vinaigrette
- 1 Cup Chopped Tomatoes
- 3/4 bag pasta
- 1/4 cup parmesan
- 1/4 cup heavy cream
- Salt and pepper both sides of the chicken and Cook in 1 tbsp butter and 2 tbsp balsamic – about 8-10 mins per side, cooked all the way through. Start your pasta water while your Chicken is cooking so it will be ready later
- Remove chicken from pan, set aside and cover with foil (letting it rest so the juices redistribute)
- Drop your pasta in the boiling water and cook as the package instructs – move strait to next step, do not wait for pasta to finish
- Using the pan you cooked your chicken in, put the spinach, 1 tbsp butter, garlic and 2 tbsp balsamic – cook until spinach is wilted (about 5-6 mins)
- Slice up your chicken into bit size pieces and add it into the spinach along with your tomatoes, the rest of the balsamic, and sprinkle about 1/2 the Parmesan in (stir in and let marry/simmer) about 5-8 mins
- By now your pasta is done – so drain your pasta (normally you would save pasta water, but for this recipe if your pasta seems like it needs more sauce, just add more balsamic) and add it into the pan with your chicken & spinach – add your heavy cream and let this heat about 2-3 mins.
- Finish by sprinkling the rest of the Parmesan on top and serve immediately!
Tips:
*I say 2-3 because this does wilt down A TON, so 3 is perfect, but if you are not a fan of spinach just go with 2 and it will just add in a little for you
**Or just use the Frozen Garlic cubes or the already minced garlic from the fridge – these are 2 items I keep on hand so my garlic tastes fresh but I don’t have to keep cloves around that go bad and get my hands all stinky
***OK- I am on a rant today – BUY THE GOOD WHOLE FAT BUTTER ya’ll!! I started this and it is a GAME CHANGER in the taste of your food. Luckily we shop at costco but I shell out the extra buck to buy the kerrygold butter- seriously amazing and better for you without all the processing and crap!
